Taco Salad

Don’t tell secrets in the garden. The potatoes have eyes, the corn has ears, and the beanstalk!

Finally a recipe using our lettuce! I realize most of my post have been about kale… but it is time I share with you one of my all time favorite recipe… TACO SALAD! I have always loved taco salad but I had never cooked it as the ‘main’ meal. Typically I make tacos and let everyone put the in the shell of their choice and I just turn mine into a salad instead. A few months ago I decided to cook and prepare the taco salad just to see what my husband would think. Turns out, he loves it too! I made a taco bowl out of a tortilla shell and it has been requested many times since. Yay!

A great thing about taco salad is that it is completely customizable to how you like your tacos! I pretty much always use beef but it could easily be made with chicken, taco, vegetarian , fish… so many ways! Monica over at The Yummy Life has a great blog with 5 different ways to make a tortilla shell bowl! I usually use method #3 and bake mine over a bowl but one of these days I would love to get the tortilla shell molds! I really think this is what makes my husband love the taco salad so much but if you are looking for a lower carb option then just toss everything into your favorite bowl instead!

The taco mix again can be made in so many ways! I can be as simple as just meat and taco seasoning or you can do like I do and add some yummy fixings into the mix! I feel like every-time I make this I tend to try adding in something new just to see if I can get away with it :) I love this because I dump a bunch of cans together but if you dried beans or frozen corn that would work just as great.

I have used both of our Tropicana leaf lettuce and also our mini romaines for the base… I think they are very similar and both did wonderful with the meat mixture on top. I love our Tropicana leaf and try to convince everyone to love it just as much as I do!


  • 1 lb ground beef or protein of your choosing

  • 1/2 yellow onion

  • Taco seasoning - follow recommended amount

  • 2 tablespoons Ground Cumin

  • 2 tablespoons Granulated Garlic - or garlic cloves

  • Optional - 1 teaspoon Cayenne Pepper

  • 1 can Black Beans, rinsed - typical can size of roughly 15 oz

  • 1 can Kidney Beans, rinsed

  • 1 can Corn

  • 1 can (4.5) oz chopped green chilies

  • 1 can (14.5 oz) Diced Tomatoes - Stewed also works, I like to chop them up more first

  • Optional - For topping: sour cream, shredded cheese, salsa, cilantro


  • If making the tortilla bowls, preheat oven to 375 - start tortillas and don’t forget to put them in once the oven reaches temperature.

  • Brown hamburger in pan

  • Chop onions and add, cook until translucent

  • Add taco seasoning, cumin, garlic, and cayenne pepper to meat and stir - let simmer for a few minutes.

  • Add black beans, kidney beans, corn, green chilies, tomatoes to mixture and stir

  • Cook until everything is heated through

  • Chop lettuce of choice

  • Add to bowl. I like to do lettuce first then meat mixture. I usually add some shredded cheese on top with some more onions and tomatoes! I like to add a drizzle of sour cream across the top as well

  • Enjoy!
